One of my friends made a salad with a Champagne Vinaigrette a few weeks ago… and I could NOT get enough of it! It was so good. So, I decided I needed to make my own and put it on my Christmas Day Brunch menu! I don’t know about you, but whenever I have people coming over, I ALWAYS like to make the food at least one time before they come. Especially if I’ve never made it before. I know that may sound a little bit crazy, but I don’t like to make something new and then it go completely wrong and they leave my house starving and talking about what a terrible cook/host I am. Nope! Not going to have it. So, this week I’ve been working on a couple recipes for my brunch that I needed to perfect. Clearly, making a vinaigrette isn’t rocket science. This came out perfect the very first time!
This dressing seriously takes 5 minutes, if that, to make. Whisk everything together in a small bowl or go Ina Garten style and shake it up in a glass jar like she does! What’s on your holiday menu?! We’re going to my in-laws Christmas Eve, then we’re having a Christmas brunch at our condo Christmas morning! I’m so excited!!! Here’s my menu so far:
Cornbread Pancakes and a Cranberry Compote , Roasted Potatoes, a Spinach Salad with my Champagne Vinaigrette, a Meaty Egg Casserole (for the guys… they’ll be super pissed if I don’t have something with some meat in it), and I’m either going to make my mom’s Orange Rolls or some kind of yummy muffin. For dessert… I’m thinking about my Dark Chocolate Pecan Pie Bars and maybe some fudge! And let’s not forget the Champagne for Mimosas!!! <3
The perfect dressing for any salad! It's super quick and easy to make...and it tastes delicious!!!
- 1/2 cup olive oil
- 3 tbsp champagne vinegar
- 1 tsp Dijon mustard
- 1 tsp minced garlic or shallot
- salt and pepper to taste
- enough salad greens for 6-8 people
- In a small bowl or liquid measuring cup, add all of the ingredients (except the greens) and whisk together until it emulsifies. (Or shake it all up in a jar!) It should coat the back of a spoon.
- Taste it and adjust your seasonings if needed. Drizzle on your salad greens!
