Paleo Peach & Blueberry Crisp

I made one of my first Paleo desserts last night and actually liked it…a lot!  Usually Paleo desserts don’t come out very well for me…or maybe I’m just finally getting used to using almond flour?  We had some super ripe peaches that needed to be eaten, so what better way to eat them by making dessert out of them!  YUM!

Here’s what you’re going to need, folks!

Servings: 3-4 (I made 3 pretty good size servings)

  • 3 fresh peaches, sliced
  • 1/2 cup blueberries
  • 1/2 lemon, juiced
  • 1/4 cup coconut sugar
  • 1 tsp ground cinnamon
  • For the Crust:
  • 1/4 cup coconut sugar
  • 1/4 cup almond flour
  • 1/4 cup shredded, unsweetened coconut (get this in the flour section; it’s not the coconut you use for coconut pie!)
  • 1/2 stick butter, melted

Directions:

1.  Preheat oven to 350 degrees.  In a small bowl, combine peaches, blueberries, lemon juice, sugar, and cinnamon together.  Mix well.

2.  In another bowl, combine all of your crust ingredients.  Stir until well combined.

3.  I served this in individual, oven proof bowls… Separate your fruit mixture into bowls and top with the crust mixture.  Place bowls on a sheet pan and bake for 10-15 minutes, or until your crust is golden brown.

4.  EAT IT UP!!!
