Chipotle and Honey Glazed Chicken

If you like sweet and spicy, healthy and nutritious, you’re going to LOVE this chicken recipe!  Serve it with your favorite veggies and enjoy!  I served it with Roasted Carrots and Mushrooms… It was amazing!  (Stay tuned for my Roasted Carrots and Mushrooms recipe!)

Yields: 4 Servings

4 organic chicken breasts, skinless and boneless

4 Adobo chili peppers, chopped

2-3 garlic cloves, minced

3 tbsp honey

1 tbsp fresh ginger, minced

2 tsp cider vinegar

1 tsp cumin

1/2 tsp cinnamon

salt and pepper to taste

1 tbsp butter

cilantro, chopped for garnish


1.  Preheat oven to 400 degrees.


2.  In a small bowl add: peppers, garlic, honey, ginger, vinegar, cumin, cinnamon, salt and pepper.  Stir well.

3.  In an oven safe skillet or cast iron skillet melt the butter, add chicken, and top with chipotle sauce on top.  Bake for 25 minutes.
