Paleo Tacos

I wanted something quick and easy for dinner tonight… So… I did tacos Paleo style!  With this recipe, I did make homemade salsa and guacamole.  Feel free to make your own or buy the store bought if you’re low on time.  Actually, don’t buy the store bought kind… make your own!!!  It’s super easy to make on your own and really doesn’t take a lot of time.  It’s SOOOOO much better AND you know exactly what’s going in it!  NO GMO!!!

Here’s what you’re going to need for the Tacos:

Yield: 2-4 people

1 lb grass fed beef

1 jalapeno, minced

1/2 onion, diced

2-3 garlic cloves, minced

1 tbsp chili powder

1 tbsp cumin

1/2 tbsp paprika

1 can Rotel tomatoes (optional)

salt and pepper to taste

1 cup water

romaine lettuce, washed and pat dried (I chopped some of the romaine up and left some big leaves to make a taco with.  Completely up to you!)

cheddar cheese (I KNOW it’s not Paleo! It’s OPTIONAL!)

Homemade salsa (recipe below)

Homemade guacamole (recipe below)

Directions:

1.  Start cooking the beef on medium heat in a skillet.  When it’s completely cooked, add the garlic, onion, and jalapeno and cook for about 5 more minutes or until veggies look translucent.

2.  Add the seasonings, water, and Rotel (if using) and continue cooking until most of the water has cooked out, about 20 minutes.  Simmer meat on low until you’re ready to eat.

If you don’t want to serve your tacos on romaine leaves, serve them however you please!  🙂

 

Salsa Recipe:

1 onion, diced

2-3 garlic cloves, minced

1 tbsp olive oil

1-2 jalapenos, diced

a nice big handful of Cilantro, finely chopped

28 oz can organic diced tomatoes

1 tbsp honey

juice of 1 lime

salt to taste

Directions:

ingredients

1.  I like to saute my onion and garlic in olive oil before adding it with everything else in the food processor or blender.  This step is totally optional, it’s just a personal preference.

2.  Add all your ingredients to the food processor or blender and pulse until it has a pureed look to it.  TASTE it to see if it needs anything… more salt… more spice…??  Easy breezy!!!  Ready to EAT!!!

Guacamole Recipe:

I could eat this stuff with a spoon!!! I LOVE GUACAMOLE!!!

4 avocados, mashed

3 tbsp onion

1-2 jalapenos

juice of one lime

salt

ingredients

Directions:

1.  Get out your blender or food processor and blend up the onion, jalapeno, and lime juice.  I have a mini blender that’s perfect for this part.  Add it to the mashed up avocado, mix it up well.  TASTE it!
