Tuna Steaks and Veggies

This meal is delicious!  It’s light, healthy, and very flavorful!  Definitely a meal I will make again… Once you get the veggies cut up, it seriously takes about 15 minutes to cook.

Here’s what you’re going to need:

Yields:  2-4 people (depending on how many tuna steaks you buy)

1 purple onion, sliced

2-3 garlic cloves, minced

2 tbsp fresh ginger, minced

1 red bell pepper, sliced

1 orange bell pepper, sliced

2 cups fresh squash, cut into bite size pieces

2 cups snow peas

2 tbsp olive oil

2 tbsp butter

2-4 tuna steaks, seasoned with salt and pepper

Sauce:

1 tbsp wasabi

1/3 cup honey

1/4 cup soy sauce

Directions:

1.  Get out your wok!  On medium-high heat add one tbsp butter and one tbsp olive oil, let this get good and hot.  Add the garlic, onion, and ginger.  Saute for about 3 minutes, then add the bell peppers.

A couple minutes later add the squash.

Let this cook for about 3 minutes, then add the snow peas.  Season the veggies with salt and pepper.

2.  In a small bowl, add the wasabi, honey and soy sauce and whisk until well combined.

3.  At this point you can put the veggies on simmer.  Get out a saute pan.  On medium-high heat add one tbsp butter and one tbsp olive oil.  When the pan is screaming HOT add your tuna steaks to the pan.

This will cook FAST.  2 minutes per side and they’re done!  After 2 minutes, flip the steaks and pour the wasabi sauce on top.  Cook for 2 more minutes and completely pull the pan off the heat.  Serve it up and consume!!!
