10 Minute Breakfast

This is one of my favorite go-to Paleo breakfast dishes that I fix often… I get so tired of eating the same thing over and over again.  So, I started throwing some veggies in with my eggs.  Whatever you’ve got, just throw it in the skillet!  It’s super quick, super easy, and scrumptiously delicious!

Here’s all you’re going to need:

Yield: 2 servings

  • 4 organic eggs, whisked
  • cherry tomatoes, halved
  • a big handful of kale, finely chopped
  • 1 tbsp coconut milk
  • 1 tbsp butter
  • salt and pepper to taste


1.  In a skillet on medium heat, add the butter.  Let it melt and get hot.  Add the tomatoes and kale.  Saute for 2-3 minutes or until the kale has softened.

2.  Add the coconut milk to the eggs and whisk.  Add the egg mixture to the skillet and scramble it up.  Season with salt and pepper.  Once your eggs are done, plate them, and kill ’em with some hot sauce!  Soooooo good!  Serve this along with your favorite fruit.  Your belly will thank you 🙂
