Paleo Italian Meatloaf

It’s comfort food made healthy!

Instead of serving my meatloaf with a side of mashed potatoes, I used cauliflower.  I know you’re probably thinking, “That’s so gross!”  Well, it’s not.  I promise!  I’ll be honest, I’m not a big fan of cauliflower at all…I don’t even like it raw dipped in ranch dressing.  BUT… I tried this recipe a friend of mine told me about and I loved it.  Seriously, it’s delicious!  I know the Cauliflower Mash is NOT 100% Paleo, but let’s be honest, a little cream cheese can help anything taste better!  You can eat this guilt free knowing it has way less carbs than white potatoes 🙂  I promise, when you serve this with meatloaf, you completely forget you’re eating cauliflower!  Go try it out!!

Here’s what you’ll need for the meatloaf:

Yield: 4-6 servings

1 onion, diced

2 garlic cloves, minced

1 tbsp butter

2 lb grass fed ground beef

1/2 cup chopped organic white mushrooms, chopped

1/4 – 1/2 cup fresh herbs, chopped (I used Italian parsley, Thyme, and Oregano) Reserve a couple tbsp for the sauce.

2 tbsp olive oil

salt and pepper to taste


2 – 8oz cans organic tomato sauce

2 tbsp honey

2 tbsp Dijon mustard

1 tbsp white vinegar

1 – 2 tbsp (reserved) fresh herbs

salt and pepper to taste


1.  Preheat oven to 400 degrees.  In a medium size saute pan on medium-high heat, melt the butter.  Add onion and garlic and cook until translucent.  Then add mushrooms and cook until softened.

2.  In a large bowl, add EVERYTHING to it!  I use my hands and mix everything extremely well.  This part is completely up to you… I make a little bite-size patty, cook it in a skillet, and taste it before I make the loaf to check my seasonings.

3.  I used a 9×13 pan to cook my meatloaf in.  Use whatever you’d like.  Spray the pan with a little non-stick spray and form your loaf.  Bake for 45-55 minutes.

4.  After my meatloaf baked for about 30 minutes, I pulled the pan out of the oven, drained some of the grease off of it and added about 3/4 of the sauce on top of the meatloaf.  Put it back in the oven to finish cooking.  When the meatloaf comes out of the oven, I add a little more sauce to the top.  This part is totally optional.  I like a LOT of sauce.  Add it as you please!
