Sage and Rosemary Vinaigrette

My Syb came up with one of the yummiest vinaigrette’s this week!  It super easy to make and tastes so good on a salad! Feel free to add your favorite ingredients to your salad… I used fresh, organic spring mix with almonds, craisins, cucumbers, red bell pepper, strawberries and blueberries, topped with this delicious vinaigrette!  If you wanted to make an entree out of this salad, top it with a piece of chicken or wild salmon.  That would be a quick and easy meal, not to mention healthy too!

Here’s what you’ll need for the dressing:

  • 3-4 sprigs of fresh rosemary, taken off the stem
  • 1 big handful of fresh (NOT DRIED) sage
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • a pinch of cayenne
  • 1/4 cup of fresh lemon juice (2 lemons)
  • 2 tsp zest of 1 lemon
  • 3/4 cup olive oil

Directions:

1.  Throw everything except the olive oil into a blender or food processor and blend for about 30 seconds.  Slowly add the olive oil and continue blending for another 30 seconds or so.  Pour it on your favorite salad and consume!
