This is one of my favorite chicken recipes! The honey balsamic sauce that coats the chicken is so good, you could seriously dip anything in it and it would taste amazing!! Drizzle it on vegetables, meat, or fish… Seriously, it’s delicious!!! You’re going to love it. Not only is it delicious, but it’s super easy to make. You can have dinner ready in 30 minutes and smiling faces at your dinner table!
Yields: 4-6 servings
- 1/2 cup balsamic vinegar
- 1/2 cup honey
- 1/2 cup coconut sugar
- 1/4 cup coconut aminos
- 5 sprigs fresh rosemary
- 5 garlic cloves, halved
- 10-12 pieces of chicken (I used drumsticks and thighs)
- handful of fresh parsley
- Combine the first 6 ingredients together in a small bowl. Whisk together until the honey and coconut sugar dissolves. Pour the sauce into a large Ziploc bag. Add the chicken to the bag, put it in the refrigerator and let it marinate for 2 hours.
- Preheat the oven to 450 degrees. Place the chicken on a foil-lined baking sheet.
Bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
Meanwhile, place the marinade in a small saucepan. Bring the marinade to a boil (in order to kill bacteria). Reduce the heat to simmer and cook over low heat until thick, about 15 minutes. Reserve for later.
Use a pastry brush to brush some of the cooked marinade on the cooked chicken. Place the chicken on a serving platter. Sprinkle with the chopped parsley.
