Southwestern Quinoa Salad

It’s like a thousand degrees here in Miami right now which means heavy, fattening meals that take forever to cook are not going to happen in this household right now.  I NEED quick, easy, and super light…because let’s face it – it’s always summertime here AND vacation is right around the corner.  SO!  If you’re in need for a quick and easy summertime salad – I’ve got you covered!  This salad only takes about 20 minutes to make.  While the quinoa cooks, get everything else ready to go.  Once the quinoa is done, let it cool for a couple minutes, mix everything together, pour on the dressing, give it a good stir, and EAT!  It’s that simple! This would be a perfect side dish or a light main entree and you can serve this cold or at room temperature.  The longer it sits, the better it tastes.  I served it as an entree and seared a couple pieces of wild salmon for a little extra protein.  My husband feels like it’s a complete meal if there’s some type of meat/fish on his plate!  If you don’t want meat this salad is FULL of protein with just the quinoa and black beans AND it doesn’t leave you starving two hours later.  Best of all – this salad is still delicious leftover!

Southwestern Quinoa Salad

  • 2 cups cooked quinoa
  • 1 tbsp olive oil
  • 1 finely chopped red bell pepper
  • 1/3 cup finely chopped purple onion
  • 1 – 15oz can organic black beans, rinsed and drained
  • 1/2 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 2 big handfuls finely chopped organic spinach

Chipotle Lime Dressing:

  • 1/4 cup olive oil
  • 2 tbsp lime juice (roughly 1 1/2 limes)
  • 1/2 tsp ground chipotle chili pepper
  • 1 tsp ground cumin
  • 2 tsp cane sugar (or honey)
  • salt and pepper to taste



  1. Cook the quinoa according to package directions.
  2. In a small saute pan on medium-high heat, saute the bell pepper and onion in the olive oil until translucent.
  3. Add all of the ingredients to a large bowl and mix well.
  4. Whisk all of the dressing ingredients together and pour on the quinoa ingredients.  Mix until well combined.  (I added a little more salt after I mixed everything together… taste it and add according to your taste!)  Serve with a protein or eat as is!
