Falafel Burgers

If you don’t love Middle Eastern food I’m not real sure we can be friends. I kid! Haha! …Kind of. Seriously though, don’t you just love it?! Ahhhh!! I’m pretty sure I could eat it every-single-day. Peach Pancakes

I am of the belief that ALL Mondays should start off with PANCAKES and lotsssss of COFFEE!  Yes?! Gaby is a lover of all things carbs….potatoes, rice, pasta, pancakes and cookies are all right up her alley!  And she’ll eat her little heart out if you give her any of the above.  To make my life a little easier in the mornings I like to have some                  pre-made/home-made breakfast stuff ready to go in the fridge.  For me, pancakes are perfect and so easy to reheat for my girl.  Continue reading

Wild Salmon Tacos

Omar eats a LOT of wild salmon around here… When he begs me for a non-vegan meal, salmon is usually what he requests.  Which I don’t mind because it is a good source of protein and omega 3s… But lately I haven’t been very creative with my salmon dinners for him, so I decided to spruce it up a bit and throw it into a taco!  WHAAAAT?!  Yep!!!  Salmon Tacos are my jammmmm!!! egg stuffed sweet potatoes Have you ever had one of those weeks where no matter how many cups (pots) of coffee you drink you just can’t seem to find any energy?  Well, welcome to my week!  I feel like I could sleep for days.  I don’t know if the stress of evacuating Irma last week has caught up to me or what, but I will tell you this: I’M SO OVER THIS FEELING OF NO ENERGY.   I have a toddler and a husband that keep me on the go…unless they’re sleeping…And I need to be able to keep up with these two.  ANY advice on finding some much needed energy would be FANTASTIC! One-Pot Curry Soup

I do realize I make a LOT of food with CURRY.  I make no apologies.  We LOVE it…  It’s easy to make food taste good with it… and quite frankly, I like when my house smells like a Thai restaurant!  I’m finally coming back to life after having a 24 hour bug that had me lifeless for a couple of days.
