We woke up this morning to FREEZING temperatures.  FREEZING, people!  Ok, freezing for us South Florida folk.  In the 3 1/2 years that I’ve lived in Miami, it’s never been THIS cold.  I literally woke up shivering.  My bones hurt and my body ached.  I know, I know… people way north of us are probably praying for 43 degree weather right about now.  The first thing I saw on the news this morning was:  “Winter Blizzard up the East coast!”  All I’ve got to say is, THANK GOD we didn’t move to Boston.  THANK GOD!!!  Miami’s not looking so bad right about now!!!

So, because we need a little something something to keep us warm, I made a VEGAN Eggnog!  I know… Eggnog is typically a holiday drink.  In my defense, we’re only day 4 into the New Year and I’m still in New Year mode… which means holiday drinks are still welcome in my home!  If you’re feeling a bit boozy, add a little rum to this!  It’s so good and it’ll definitely warm you up!  ❤

Vegan Eggnog

  • Servings: roughly 2 1/2 cups
  • Print

The perfect holiday drink!

Ingredients:

  • 1/2 cup cashews
  • 2 cups almond milk
  • 2 tbsp maple syrup
  • 1 tbsp water
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp cardamom
  • 4 – 6 pitted dates
  • 1 tsp vanilla, optional
  • couple splashes of your favorite rum, optional

Directions:

  1. In a small bowl, add the cashews.  Cover them in water and let them sit for at least 2 hours.
  2. Once the cashews have softened, add EVERYTHING except the booze to a high powered blender.  BLEND-BLEND-BLEND for about 1 minute, or until completely smooth.
  3. I like to refrigerate my eggnog until it’s super cold.  This part is totally up to you.
  4. Pour into pretty glass and give it a splash or two of rum if you’d like!  Garnish with a couple sprinkles of cinnamon or throw a cinnamon stick in the glass.  Enjoy!
