Back in my days of not eating so healthy… me and the fam would go to this BBQ restaurant back home where they had these HUGE baked potatoes stuffed with whatever kind of barbecued meat you wanted, topped with tons of cheese, sour cream, and chives. These potatoes were so BIG…me, my mom, and sister would split one! I’m not going to lie, they were so good. But let’s be honest – not very healthy. Continue reading
S-T-R-E-S-S….. A six letter word that makes me do several things. 1.) Emotionally eat. 2.) Over exercise (because I emotionally eat). 3.) WORRY WORRY WORRY. *BIG sigh* When I’m stressed I have absolutely no desire to be creative in any aspect of life, especially cooking…I over analyze everything to the point of making myself nuts. I finally reached my break of insanity yesterday mainly because I’m sick and tired of eating the same things over and over and over. This Vegan Cuban Buddha Bowl is the BEST thing I’ve eaten all week! I created this recipe in an effort to get ready for a 4-day-get-a-way to Cuba with the Mister. Yes, you read that right… We are in fact escaping by ourselves for FOUR WHOLE DAYS.
Mama’s Chicken & Dressing
We’ll call this my “Thanksgiving in June” recipe! This is not my most healthy meal at all. It’s NOT paleo, gluten free, OR vegan. BUT I did use all organic ingredients, so that has to count for something good, right?! No GMOs, baby. It’s a meal we typically only eat two, maybe three times a year, and it’s ALWAYS served at Thanksgiving. I’ve been super homesick for the last week or so and needed some comfort food. Continue reading
